This is a quick recipe for those of the developed and mature taste buds.
Steamed Red Snapper in coconut milk
Ingredients
2 red snappers (3-5 lbs)
1 can of coconut milk
1 stalk of scallions
1 head of garlic
Complete seasoning
1 package of Cock Soup ( chicken or fish) mix
Fresh thyme
2 carrots
1 onion
2 tbl. Curry
Lemon grass (fever grass)
Butter/vegetable spread
Directions:
Clean, wash, and season your fish to your taste.
In a pot melt some butter/vegetable spread, then add thyme, onion, couple cloves of garlic , complete seasoning (done to your taste), a little vegetable oil and curry.
Curry is added to give the dish color. Cook for atleast 4 minutes so curry can bloom in the oil. Once that is done add your coconut milk, scallions, lemon grass, more garlic, more thyme and a little water.
Let this simmer for a 10-15 minutes atleast.
Before adding your fish, place the rest of your garlic, cock soup,and carrots. Then place your cleaned and seasoned fish on top of this simmering mixture.
Close the lid of your pot and wait 10-15 minutes(depending on fish size)
And its done. You can serve over a bed of rice or eat it with water crackers.
Now I am no Master Chef, only a person that doesn't mind combining aromatics to come up with something tasty.
This recipe is nothing new , I wanted to share what I cooked tonight. And maybe you will try something new.
