The lunch I made today that was so yummers and easy to make I wanted to share.
In my adventures of grocery shopping and providing variety in my daughter's dinner. I saw tomato pesto and it peaked my interest so I purchased it and went to cooking.
In reading the instructions on the jar all you had to do was mix , scoop, and toss with hot pasta and for a twist I added organic baby spinach and paried it with garlic butter shrimp.
Ingridents:
Pasta of your choice ( I had linguine)
1 package of fresh spinach.
3-7 cloves of garlic
Olive oil
Complete seasoning
Black pepper
31-40 shrimp (optional)
Classico tomato pesto
Butter (vegetable spread)
Wash, clean and season shrimp, set to the side.
Follow instructions on pasta package on proper cooking times.
In a hot saute pan put some olive oil, garlic, butter, complete seasoning, and black pepper in and cook until you smell the garlic.
Then put in your seasoned shrimp and cook the shrimp.
After pasta has finished cooking drain water. Place pasta back the pot along with your spinach and toss with 4 tablespoons of the tomato pesto.(MAKE SURE YOUR BURNER IS OFF WHEN DOING THIS)
Until pasta is well coated and spianch is slightly wilted.
Serve tomato pesto pasta with spianch with garlic butter shrimp on top.
This took about 15-20 minutes to finish, and it tastes like I went to a restaurant to eat.
